El libro, publicado en la editorial McGraw-Hill Interamericana para su colecci\u00f3n Aula Magna, consta de 19 cap\u00edtulos que se han convertido en un manual de referencia para estudiantes de Grado y M\u00e1ster en Biotecnolog\u00eda, as\u00ed como en Ciencia y Tecnolog\u00eda de Alimentos.<\/p>\n<p><em>Biotecnolog\u00eda Alimentaria <\/em>nace de la confluencia de dos trayectorias estrechamente vinculadas a la UMH. Por un lado, se sustenta en los m\u00e1s de quince a\u00f1os de experiencia docente e investigadora del catedr\u00e1tico Daniel Valero, dentro del Grado en Biotecnolog\u00eda. Por otro lado, se enriquece con la perspectiva especializada de Vicente Agull\u00f3, doctor en Alimentos Funcionales y actual investigador postdoctoral. Adem\u00e1s, la obra analiza las tendencias m\u00e1s vanguardistas del sector: desde el dise\u00f1o de alimentos funcionales hasta nuevas fuentes nutricionales como los insectos o bebidas fermentadas como la kombucha.
